Step 01

Heat the butter in a pot, add the onions and sauté till transparent and add the cucumber and sauté for few minutes.

Step 02

Stir in the vegetable stock, salt to taste and white pepper powder. cover and cook on low heat for 20-25 minutes till the cucumber is cooked and tender. Stir in the cream, remove from the heat and allow it to cool.

Step 03

Blend the  soup to obtain a puree and strain through a muslin cloth.

Step 04

Transfer to a soup bowl and refrigerate for 1 hour.

Step 05

Serve chilled garnished with cream.
