Step 01

Soak wheat in sufficient water overnight and squeeze out the wheat milk.

Step 02

Heat water in a pot , add the lamb bones, gram masala, bayleaf, onion, garlic, ginger and allow to cook for about 4-5 hour on low heat. Remove from heat and strain through a soup strainer.

Step 03

Melt butter in a pan and sauté the onions till slightly browned. Stir in the strained stock and cook for 5-10 minutes.

Step 04

Add the almond paste and allow to cook for 5 minutes. Stir in the  salt and white pepper powder and remove from the heat and strain the stock.

Step 05

Reheat the stock in a pot, add saffron and wheat milk. Bring to a boil and remove from heat

Step 06

Server hot with garnished with boiled lamb brunoise.
